High-Fiber Diet and Plant Source Protein Ward Off Colon Cancer

Recently in Lyons, France, at the European Conference on Nutrition and Cancer, findings were presented that indicate that eating lots of red meat many create as many cancer-promoting chemicals (N-Nitroso compounds) in the colon as smoking does.
The study was done on volunteers who moved into a laboratory for at least 3 months and had their diets strictly controlled. Calories, fat and weight were the same, but the amounts and types of protein changed.
The more red meat eaten, the higher the concentration of cancer-promoting compounds. In fact, at the high level of meat consumption, the level of N-Nitroso compounds was equivalent to the concentration in tobacco smoke.
Replacing the red meat with the same amount of chicken or fish resulted in the level of these compounds returning to normal. They also remained at a normal level when the protein came from dairy (including whey) or soy products.
The study also reaffirmed that those who ate a high-fiber diet rich in fruits, vegetables and whole grains had a 40% less chance of developing cancer than those who ate the least roughage. |
